A little bit more about me

I am married to a wonderful man named Andrew. We have been married for almost 6 years now and although we have bad moments in the end he really is my best friend and I couldn't imagine my life with anyone else. We have a little boy Ewan who is now two years old. He is really sweet and utterly adored. We had a bit of trouble getting pregnant and he is all the more adored for the thought that we couldn't have children and now I have this wonderful little bundle. He is growing up so fast. Today he made a mess of chocolate in the lounge and went running by himself to the kitchen for a cloth to clean it up. Heartbreaking cute:) I have worked for many years in conservation as a GIS consultant. I am approaching one of those big age numbers and its now time to do something for myself. Luckily my job is over the internet and very part time so I am taking the plunge and starting to write. My goal is to eventually write full time. Its a scary moment but its a now or never moment. If I don't do this now I will lose the courage to try. To end off a couple of pics:)

Meat Free Monday 1

So in aid of Meat Free Monday which I am a huge supporter of I will be uploading the recipe for what I made the night before on a Tuesday. Hope you enjoy the series.

Vegetarian Lasagne

Ingredients

  • 750 ml plain yoghurt

  • 250 ml cream cheese

  • 2 tablespoons crushed garlic(less if you dont like garlic)

  • 500g assorted roasting veg( I used mushrooms, baby tomatoes, baby marrows and butternuts) cut into bite sized pieces or strips for marrow

  • 500 ml ready made roasted veg pasta sauce

  • 8 - 10 sheets lasagne uncooked

  • 1 block feta

  • 100 ml grated cheddar cheese

Method

Preheat oven to 200 degrees celsius. Place veg on a roasting tray and drizzle with olive oil. I sometimes add some dried herbs such as thyme but thats optional. Place in the oven and roast for 15 min. In  the meantime beat together the cream cheese, yoghurt and garlic. If its the right season you can add the grated peel of one lemon. Start layering the lasagne. Place enough sheets on the bottom of a deep about 20cm x 25 cm oven proof dish. Spread the pasta sauce then add half the roasted veg. Top with the yoghurt mix. Repeat once. Top with lasagne sheets and the last of the yoghurt sauce. Sprinkle cheese and crumbled block of feta. Place in oven and roast for 25 - 30 min. Yum!!

Hi World

I had planned to wait until I got this site perfect before I started posting but what the hell.So to get started this is a blog about many things but then we as humans are about many things. I blog about travel, writing(I am busy editing my first book), reviews of books I read, recipes I find and love or make up myself and last but by no means least about being a wife and mother. As one of my fav bloggers A day in the wife says it starts with coffee and ends with wine everything else changes. So I hope you enjoy what I have to say:) Enjoy your weekend and we will chat again on Monday
