Vegetarian Lasagne
Ingredients
- 750 ml plain yoghurt
- 250 ml cream cheese
- 2 tablespoons crushed garlic(less if you dont like garlic)
- 500g assorted roasting veg( I used mushrooms, baby tomatoes, baby marrows and butternuts) cut into bite sized pieces or strips for marrow
- 500 ml ready made roasted veg pasta sauce
- 8 - 10 sheets lasagne uncooked
- 1 block feta
- 100 ml grated cheddar cheese
Method
Preheat oven to 200 degrees celsius. Place veg on a roasting tray and drizzle with olive oil. I sometimes add some dried herbs such as thyme but thats optional. Place in the oven and roast for 15 min. In the meantime beat together the cream cheese, yoghurt and garlic. If its the right season you can add the grated peel of one lemon. Start layering the lasagne. Place enough sheets on the bottom of a deep about 20cm x 25 cm oven proof dish. Spread the pasta sauce then add half the roasted veg. Top with the yoghurt mix. Repeat once. Top with lasagne sheets and the last of the yoghurt sauce. Sprinkle cheese and crumbled block of feta. Place in oven and roast for 25 - 30 min. Yum!!
We also do meat free Monday's. The lasagne sounds great! I am a bit boring, and we usually eat something with mushrooms standing in for the meat.
